Qualifying papaya puree for production
The most important commercial variables include fruit maturity, sweetness, color and consistency. Two papaya purees with similar general descriptions can differ noticeably in orange-red color, tropical aroma and perceived sweetness depending on cultivar and harvest maturity.
Manufacturers should also define the required puree finish and viscosity. Beverage and baby-food applications may require a very smooth product, while bakery and spread applications can often accommodate a heavier body.
Commercial planning should consider crop origin, harvest season, conventional or organic status, annual volume, packaging format, frozen or ambient storage capability and shipment timing. Larger programs benefit from agreed analytical and sensory tolerances for repeat supply.
